Fruits and Vegetables industry produces large volumes of wastes, both solids and liquid, resulting f rom the production, preparation and consumption of its products. Processing of fruits and vegetables produces two types of waste - a solid waste of peel/skin, seeds, stones etc., a liquid waste of juice and wash-waters. In some fruits the discarded portion can be very high (e.g. mango 30-50%, banana 20%, orange 30-50%). These wastes pose increasing disposal and potential severe pollution problems and represent a loss of valuable biomass and nutrients. Beside their pollution and hazard aspects, in many cases, fruits and vegetables processing wastes might have a potential for conversion into useful products of higher value as by-product, or even as raw material for other industries, or for use as food or feed after biological treatment. The composition of wastes emerging from fruits and vegetables processing industry is extremely varied and depends on both the nature of the product and the production technique employed. Furthermore, the volume and concentration of the waste material will not be constant. This may cause some problems in managing a consistent working process due to fluctuations in the nature, composition and quantity of raw materials. Quantity and quality of wastes is important on the decision of evaluation of wastes.

Dr. Sucharitha K .V. Assistant Professor in the specialization Food Science & Nutrition and Dietetics in Department of Home Science in Sri Venkateswara University, Tirupati. She post graduated in Food Science Nutrition in 1993 from the same University and she did PhD in 2005 in Sri Padmavathi Womens University, Tirupati. She was Raman Post Doctoral Fellow 2016-17 in Penn State University, USA. She is a recipient of Best Scientist Awardee-2017 Andhra Pradesh in the field of Agricultural and Food Sciences. She presented papers in XI Asian Congress of Nutrition 2011 in Singapore and in New York Academy of Sciences 2014, in New York, USA. She presented more than 30 papers in seminars and conferences in India. She published 48 papers in National and International Journals. She published one book and three chapters.She is Life member in Nutrition Society of India and Indian Dietetic Association. She is the Convener of Council for Promotion, Research & Trade in Traditional Foods (CPRTTF), Tirupati Chapter and Food Safety Standards Authority of India (FSSAI) NetPro.FN Andhra Chapter.
