Chilli or hot pepper (Capsicum annuum L.) belongs to family Solanaceae and it is economically important and valuable spice and vegetable crop throughout the world. It is grown for vegetables, spices, condiments, sauces, pickles and for making beverages and medicines. It is rich in vitamin C, while drying it loses most of its vitamin C and increases vitamin A. Pungency in chilli is due to the alkaloid “capsaicin” found in the pericarp and seeds of fruits. Peppers has the power to boost immune system and lower cholesterol, reduces platelet aggregation reducing the risk of heart attacks (GOI, 2009).

Dr. Anil Laxman Bhalerao is Assistant Professor in Botany at Chikitsak Samuha's S.S. & L.S. Patkar and V.P. Varde College Goregaon Mumbai, Maharashtra India. He has perceived M. Sc. and Ph. D. in Botany from Dr. Babasaheb Ambedkar Marathwada University Aurangabad, Maharashtra, India. He was awarded as J.R.F. and S.R.F. by University Grants Commission (UGC) during the tenure of his Ph.D. degree. He has 15 years of teaching and research experience. He has published 22 research papers in various peer reviewed, UGC care listed International and National journals and conference proceedings. He has given invited talk in 07 colleges. He is a member of Board of studies in Botany. He has attended 25 National and International conferences.

Dr. Rajesh Shrirangrao Gaikwad is Assistant Professor, Swami Vivekanand Senior College, Mantha, Jalna Maharashtra, India since 2010. He obtained his M.Sc and Ph.D in Botany from Dr. Babasaheb Ambedkar Marathwada University, Aurangabad, Maharashtra, India. He also obtained his M.Sc Enviornmental Science from Yashwantrao Chavan Maharashtra Open University, Nashik, Maharashtra, India. He was awarded J.R.F and S.R.F by University Grants Commission (UGC), New Delhi, India during his research. He has ten years of teaching and 15 years of research experience. He has published about 30 research articles in various prestigious international and national journals and He has authored 04 textbooks with reputed publishers. He is life member of various associations of plant sciences. He has attended and presented his research findings in 60 national and international conferences.
