Chilli or hot pepper (Capsicum annuum L.) belongs to family Solanaceae and it is economically important and valuable spice and vegetable crop throughout the world. It is grown for vegetables, spices, condiments, sauces, pickles and for making beverages and medicines. It is rich in vitamin C, while drying it loses most of its vitamin C and increases vitamin A. Pungency in chilli is due to the alkaloid “capsaicin” found in the pericarp and seeds of fruits. Peppers has the power to boost immune system and lower cholesterol, reduces platelet aggregation reducing the risk of heart attacks (GOI, 2009).
